Vegan Hemp Mushroom and Zucchini Pasta

INGREDIENTS

​

3 spiraled zucchini  

2 bell pepper, orange and yellow

1 red onion

2 bunches of kale and or spinach

2 tablespoons of hemp seeds

½  cup hemp milk

2 key limes

2 jalapeño

1 carton baby bella mushrooms

1 carton of Cherry tomatoes

Salt to taste

1 teaspoon Cayenne pepper

1 tablespoon of dried Basil

2 tablespoons of Avocado oil

 

DIRECTIONS

  1. Preheat oven to 375.

  2. Toast hemp seeds until fragrant. About 5 minutes.

  3. Wash zucchini and spiral. Season to taste with salt, cayenne pepper and dried basil.

  4. Arrange zucchini on pan and zucchini for 20 - 25 minutes. This will remove moisture.

  5. While zucchini is roasting, thinly slice onion, bell peppers, jalapeño and mushrooms.

  6. Saute onions and peppers for 5 minutes and add mushrooms,  cherry tomatoes  and add kale. Cook for 5 more minutes

  7. Then add juice from 2 limes.  

  8. Season with salt, basil and cayenne pepper.

  9. Add hemp milk.

  10. Remove zucchini  from oven and let cool.

  11. Plate roasted zucchini then add mushroom sauce. Top with roasted hemp seeds
